Ingredients
3 skinless chicken breasts
halves
2 L homemade chicken stock
2 medium cloves garlic
2 sprigs fresh thyme
1 bay leaf
1 large carrot chopped as
cubes
1 medium onion
2 medium ribs celery
Salt and freshly ground black pepper
Minced fresh dill, flat-leaf
parsley
Preparation
Step 1
In a large soup pot take
chicken breasts. Add garlic, thyme, and bay leaf and chicken stock and cook over
medium-high heat on a stove for 25-30 minutes.
Step2
Bring soup to a simmer.
Discard thyme sprigs and bay leaf.
If soup appears cloudy, you can strain it through a fine-mesh strainer to make it look clear
Step3
Add cubes of carrot, onion and
celery and cook until they become just tender[for about 10 minutes]. Season
with salt and pepper. Add minced fresh parsley and dill and remove from stove.
Take cooked chicken breast pieces out ,chop them into small eatable sizes and
add back into the soup. Stir well .Serve hot.
