Chicken breast soup

It is a healthy, nutritious, non-vegetarian soup which can be taken by all age groups. This soup is low fat, lean protein type and it can be taken by everyone including those who are on weight loss work out plans.

Serving 5 people

Ingredients

3 skinless chicken breasts halves

2 L homemade chicken stock

2 medium cloves garlic

2 sprigs fresh thyme

1 bay leaf

1 large carrot chopped as cubes

1 medium onion

2 medium ribs celery

Salt and freshly ground black pepper

Minced fresh dill, flat-leaf parsley

 

Preparation

Step 1

In a large soup pot take chicken breasts. Add garlic, thyme, and bay leaf and chicken stock and cook over medium-high heat on a stove for 25-30 minutes.

Step2

Bring soup to a simmer. Discard thyme sprigs and bay leaf.

If soup appears cloudy, you can strain it through a fine-mesh strainer to make it look clear

Step3

Add cubes of carrot, onion and celery and cook until they become just tender[for about 10 minutes]. Season with salt and pepper. Add minced fresh parsley and dill and remove from stove. Take cooked chicken breast pieces out ,chop them into small eatable sizes and add back into the soup. Stir well .Serve hot.

 

Health benefits

   Chicken breast used is skinless and therefore it contains less saturated fat. It is rich in lean protein which is good for health .lean protein of chicken breast meat do not pose the risk of cardiovascular diseases  as red meat can do. The estimated glycemic load of chicken breast is zero.It can be taken even by diabetic people.

Chicken breast is a very good source of selenium, phosphorus, vitamin B6, and niacin. Selenium is important for thyroid function and formation of DNA.Phosphorus supports health of bones and teeth. Vitamin B6 and niacin is very important for the functions of nerves.

     Celery contains a plant compound called apigenin, which plays a role in traditional Chinese medicine as an anti-inflammatory, antibacterial, antiviral, and antioxidant agent.celery has anti cancerous properties. Selinene ,limonene, kaempferol ,p-coumaric acid are other antioxidant compounds present in celery.

    Garlic helps boost the body's immune system, reduce high blood pressure and cholesterol levels.

    Onions contain various vitamins, minerals, and potent plant compounds that have been shown to promote health in many ways.  Onions are high in vitamin C, an antioxidant which boost immunity as well as collagen formation skin and muscle health

 They are also a good source of potassium which regulates blood pressure.

It also contains folates and vitamin B6 which are important for the for the formation and functioning of blood cells and nerves.
